It’s quite normal for me to start my bleating about Christmas at this time of year. It’s 1 December and my tree is UP and I’m already delighting in my festive baking. Lucky for me, the generous folks at Buy Wholefoods Online contacted me recently and asked if I’d like to try out some of their goodies. I said YES PLS and pretty soon I had a super big bag of (true) cinnamon, a bag of juicy and delicious dried cranberries, and another of amla powder (a superfood apparently packing more antioxidants and other good stuff than blueberries).

I received these products in exchange for writing a review on the blog, however, all the thoughts and opinions expressed in this blog post are 100% mine yo!

Given that I am hopelessly now in the Christmas spirit, I’d like to share a couple of very festive recipes; one is slightly more indulgent than the other, but both are thanks to the delightful ingredients from Buy Wholefoods Online. The orange and cranberry loaf is perfect for December breakfasts or tea breaks, particularly with the wholewheat flour, and the apple and cranberry cinnamon rolls are pure, fluffy indulgence. The former is based on this recipe, and the latter on this one.

Orange and Cranberry Loaf

Ingredients

  • 2 cups plain wholewheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground cinnamon
  • 1 large orange zested
  • 1 flax egg or other egg replacement
  • 1 cup soya milk
  • 1 tbsp apple cider vinegar
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup dried cranberries

Instructions

  • Begin by pre-heating the oven to 180°C and greasing a loaf tin.
  • Pour the soya milk into a small jug, and add the apple cider vinegar. Set it aside to curdle. (This replaces the buttermilk in the original recipe.)
  • Mix together the dry ingredients and make a well in the centre.
  • Add the orange zest, flax (or other) egg, vegetable oil, and vanilla extract to the curdled milk. Mix well.
  • Add the wet ingredients to the dry, and fold in until mixed well. Fold in the cranberries.
  • Pour the batter into the loaf tin and bake for 45 minutes, until browned on top and a toothpick comes out clean.
  • Allow to cool completely before slicing.

Or, for something a little sweeter…

If you (like me) are a fan of enormous fluffy doughy cinnamon rolls, rather than the more flaky pastry type, then this next recipe is definitely for you. You can leave out the cranberries if you don’t fancy them, and you can replace the apple sauce/butter with regular butter if you don’t have any to hand. To me this is a perfect Christmas Day breakfast, and you could prep the rolls the night before and just pop them (covered) into the fridge rather than into the oven. Then, freshly bake on Christmas morning. Omg!

Apple and Cranberry Cinnamon Rolls

Ingredients

For the dough

  • 3 and 3/4 cups strong white flour
  • 3 tbsp cornflour or thickening flour
  • 7 g dried yeast
  • 1/4 cup caster sugar
  • 1/2 tsp salt
  • 1 and 2/3 cups soya milk
  • 1/3 cup vegan butter or margarine

For the sticky sauce

  • 1/3 cup vegan butter or margarine
  • 2 tbsp rice syrup
  • 3 tbsp soft brown sugar
  • 1 pinch salt

For the filling

  • 3/4 cup applesauce/apple butter
  • 2 tbsp soft brown sugar
  • 2 tbsp cinnamon
  • 1 cup dried cranberries

Instructions

  • Begin by gathering the dough ingredients together. Combine the dry ingredients in a large bowl.
  • Melt the vegan butter in a non-stick pan, and once melted, add the soya milk and immediately take off the heat. The mixture should only be warm, not hot, when you add it to the dry ingredients.
  • Mix the dough well and then leave covered in a bowl for 1 hour to rise.
  • In the meantime, put the pan back on the heat and add the sticky sauce ingredients. Mix well and bubble slowly over the heat until it starts to thicken.
  • Grease a baking tin (I used a cast iron skillet) and pour the sticky sauce into the base then set aside.
  • In a small bowl, mix together the brown sugar and cinnamon for the filling.
  • When the dough has risen, turn it onto a floured surface and roll into a large rectangle that's about the width of 8 of your cinnamon rolls (it depends on how tall you want them to be!)
  • Spread the applesauce onto the dough leaving a strip uncovered at the top. Sprinkle over the cinnamon and brown sugar mixture evenly, and add as many cranberries as you fancy.
  • Roll the dough into a log, starting from the bottom and using the uncovered strip at the top to 'seal' the roll neatly. Slice into halves, then each half into halves again, and then again until you have 8 pieces.
  • Plop them into the pan you previously poured the sticky sauce into, and cover and let rise for another hour.
  • Meanwhile, pre-heat the oven to 175°C. When the hour has passed, put the rolls into the oven to bake for 30 minutes.

I’ve also been adding the amla powder to my smoothies, a little more each time as the taste is a wee bit bitter. However, I couldn’t taste it at all once I blended it with my frozen fruit and milk, so I’m looking forward to developing some superhuman amla powders over the festive period YASSS.
